“Cassava can become a basic raw material for the preparation of a range of processed products, which will in fact increase the demand for it while contributing to agricultural transformation and economic growth in developing countries. These strategies focus on research, production, processing and marketing. This work aims to contribute to the achievement of the above-mentioned research and processing strategies. More specifically, we want to: – analyse the different uses of cassava in daily life; – present a technique for producing new cassava-based drinks. Indeed, cassava is used in the production of several products for human and animal consumption. It is also used in the industrial sector and can be used to produce alcoholic and non-alcoholic drinks.
